I really don't enjoy cooking - I am so uncreative in the kitchen. I may be able to DESIGN a kitchen and do all kinds of fun things to it as an interior space but my creativity stops there!
I do, however, on rare occasion find some really good recipes online or in a cookbook and I thought I might start sharing some of them. I gave mom a recipe this weekend from my Dream Dinners cookbook for Chicken and Red Potatoes which is very very yummy and I will post that later but today I want to post a recipe for the most delicious Beef Stroganoff ever!
Now, don't snarl when you start thinking "Beef Stroganoff?!?!?!?" This recipe is so very good! Trey and I both love to eat it - as well as the kids - AND it's HEALTHY! 1 serving (1c.) is 5 pts on weight watchers. Everything is low/reduced fat so even if you're not on a diet, you can prepare a healthy meal for your family and not feel guilty if you want a little more than your serving!
Beef Stroganoff
- 8oz. Lean ground beef
- 1/2 c. chopped onion
- 1 can Cream of Mushroom soup (10 3/4 oz.)
- 1/2 c. sliced mushrooms (2.5oz. drained)
- 1/4 tsp. black pepper
- 2 c. cooked wide egg noodles (I've used the wheat ones before and it tasted just as good as the normal egg noodles)
- 1/4 c. nonfat sour cream
- 1/2 tsp. diced parsley
Boil egg noodles by following directions on bag. Drain and set aside.
In a large skillet sprayed with cooking spray, brown meat and onion. Add mushroom soup, mushrooms, black pepper & noodles. Mix well to combine. Simmer for 10 minutes. Remove from heat. Stir in sour cream & parsley.
Provides 4 servings (1 c. each)

I will definately have to try this recipe! Have Austin tell you about the strogonoff (can't spell worth much) I made for him when we were dating. He ate it and I worried that he would die later on that night...
